flourless chocolate cake
9 eggs separated
1 cup sugar
1 1/2 pounds of slave free chocolate
dagoba,green and black,or any
of the free trade brands
1/2 pound of butter
preheat oven to 325 degrees.162 celsius
butter and sugar a 9" springform pan
melt chocolate with the butter,cool
to tepid
beat yolks with 1/2 the sugar to ribbon stage
beat whites with the rest of the sugar
to soft peaks.
fold 1/2 of the yolk mixture into the
chocolate,then 1/2 whites alternately until
all mixed
bake for 30 minutes the center should be softer than
the edges,remove from the oven,allow to rest,two to three hours for it to set into a lovely,velvety treat.
